Pedro Collins Cocktail

  • 2 parts BACARDI® Superior Rum
  • 1 part Freshly squeezed lemon juice
  • 2 heaped tsp. caster sugar
  • Soda water or sparkling water to top up
  • Cubed ice
  • Lemon wedge to garnish
  • Highball glass
  • Step 1. Put all the ingredients (except the garnish!) into a shaker.
  • Step 2. Add ice and give it a proper shake.
  • Step 3. Double strain (using both the Hawthorne and Fine Strainer) into a chilled or frozen glass.
  • Step 4. Top up with soda water or sparkling water.
  • Step 5. Garnish with lemon wedge or orange wedge preferred.

The original Tom Collins is a venerable old gin cocktail from the Victorian era. A pleasant enough drink, but somehow too... dry for our taste. Doesn't have much of a sense of humour. A little too stuck in the past. So, we asked our own master mixologist Daniel Cordoba to drag the Tom Collins into the 21st century. And here you have it: a funky Cuban version, known to its friends as either Pedro Collins or Ron (as in Spanish for “rum”) Collins. Sure, it's long and refreshing like cousin Tom. But we think it's better suited to hot tropical nights under the stars.
